Tapioca & Coconut 65%
Caramelized grated fresh coconut and tapioca crisps is Baiani’s grandma’s precious recipe for breakfast and they needed to bring this family tradition to their chocolates. It’s deliciously rich and full of crunchiness. Vegan.
Lime & Chili Nibs 70%
This inclusion Bar contains flavoured cacao nibs that are soaked in a delicious lime and chili juice, both sourced at their farm, Vale Potumuju. After that process they are roasted to perfection. It’s a surprising result since these ingredients let the 70% chocolate flavours remain but at the same time seducing with a tingy spice sensation. Vegan.
Brazilian Coffee 70%
The fermentation and drying processes, along with the sensory similarities between bean to bar chocolate and special coffees make this pairing almost automatic. This 70% dark chocolate bar made with the Gran Reserve organic coffee from Latitude 13 brings a unique blend with delicate, almost floral notes. Latitude 13’s farms are located at the high altitudes of Chapada Diamantina, Bahia, Brazil. Vegan.
Vegan Milk 60%
While almost all of Baiani bars are vegan, the creaminess that only milk brings can be tasted in this bar in a different way than the others. The purest coconut milk paired with their single origin cacao makes this bar unforgettable.
Dark Milk 57%
Baiani’s Dark Milk Chocolate Bar contains 57% cacao beans with an additional 7% cacao butter, enabling the cacao’s inherently smooth caramel flavors to shine through. It’s a bit different from other milk chocolate bars since there is not a lot of sweetness revealed overall but it brings notes which themselves connote hints of sweetness, like caramel, cereal, hazelnut, and honey.
Orange Zest 70%
For this recipe they don’t use infusions, essences, much less any artificial flavour; only the fresh zest from very carefully selected oranges that are added to the 70% chocolate. The cacao butter in the chocolate encapsulates the freshness of the zests keeping this intense flavour, just waiting for that first bite and for an amazing experience. Vegan.

Passion fruit is one of Brazil's most beloved fruits, combined with a crunchy texture resulting from the demerara sugar caramel mixed with the dehydrated passion fruit pulp.
Cappuccino is a favourite coffee recipe worldwide and the inspiration for this bar. Blending their own white milk chocolate with their 65% dark and a speciality coffee inclusion, Baiani has created their unique take on cappuccino.
